I have a subscription to Privado VPN. I’m considering that purchase of a UD Pro and would like to know if it’s possible to configure a policy on the UDM to route certain hosts (nzb downloader) to Privado using the builtin VPN client?

Yes. Routing > policy based routing.
I currently do this for my *arr suite with real-debrid download client.
You can choose to route specific networks or individual hosts to be tied to your vpn client (in my case Windscribe)
